Each month we receive so many messages of gratitude and appreciation that it's often challenging to pick just one 'Post of the Month' – but this month I had to acknowledge Nathan from NSW for his heart-felt, hand-written letter.

'The Black Swan' by Nassim Taleb

A black swan is defined as a positive or a negative event that appears highly improbable – but when it does happen, it can cause massive consequences. Case in point: the rise of Google.

In this NY Times best-selling book, Nassim claims that we act like we know almost everything. But even the experts among us don't know what they don't know. That's because we dismiss seemingly isolated events as 'random.' Little do we know that these random events are actually changing the very world we live in.

Ingredients for Cake:

½ cup water
½ teaspoon salt
½ teaspoon ginger
1 cup grated carrots
1¼ teaspoon cinnamon
1 teaspoon baking soda
½ cup light brown sugar
½ cup organic canola oil
½ cup organic cane sugar
½ teaspoon baking powder
2 cups gluten free flour blend
1½ teaspoons vanilla extract
1 teaspoon apple cider vinegar
3 tablespoons unsweetened apple sauce

Ingredients for Frosting:

2 cups powdered sugar
115g vegan cream cheese (softened)
4 tablespoons buttery spread (softened)


1Preheat the oven to 350 degrees.
. Grease a 20cm or 22cm round cake pan and line the bottom of the pan with a circle of parchment paper.
. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger and salt, then add the shredded carrots and toss to coat.
4. Next, add the sugars, canola oil, apple sauce, apple cider vinegar, vanilla extract, and water, and stir well until combined.
 Pour the batter into the prepared pan and bake at 350 degrees for 30-35 minutes (or until a clean knife inserted in the middle comes out clean).
6. Allow the cake to cook for about approx. 15 minutes in the pan, then run the knife around the edge of the pan and carefully turn upside down over a wire rack to remove.
7. Whilst the cake is cooling, in a mixing bowl whip the cream cheese and the vegan buttery spread, then sift in the powdered sugar – mixing until very smooth and creamy.
8. When the cake is fully cooled, frost the top then serve or refrigerate as required.
